2 whole chickens with organs
1 big coconut, grated
2 handful shallots, peeled

Cooking oil, salt and sugar to taste.
That’s it! That’s the precious recipe as mom had told me.
But how much of each precisely? I asked. How many grams or teaspoons?
Agak-Agak lah! (guess or estimate)
And that’s the problem with Peranakan cooking. Mom (and grandma) never gave precise measures, but they expect their methods for cooking and preparation to be strictly adhered to. They won’t say how many degrees C should the oil be, or how long should I fry it. It’s all Agak-Agak. Instead, I’m expected to have my nose open to smell the fragrance, my eyes open to see the size of the bubbles in the oil, my ears open to hear the intensity of sizzling and my brains in gear to know how brown is sufficient as residual heat will further brown it. I needed to have some combination of all four to tell when anything is ready. I hated that, as it meant I had to spend hours cooking in order to experience the subtle nuances of that magical moment is when food cooked to the correct timing makes the metamorphosis from yuck to Ummmmmmmmaaaaai! The Saltiga Z reel was so smooth that it rivalled ABU’s Ambassadeurs which were legends in smoothness in their time. Cranking a Saltiga Z gave one a pleasurable feeling of silkiness similar to stroking the coat of a kitten. And who could forget the attention to detail Daiwa engineers gave to that reel, with O-rings for weatherproofing almost everywhere, including the screws that held the reel together.
Sadly, after the success of Saltiga’s overhead reels, Daiwa seem to have changed tack and favoured the egg-beater style of reels for the Saltiga range and it had been so for well over a decade. So it was to the delight of fans for conventional reels that Daiwa launched the Saltiga 10 and Saltiga 15 conventional star drag reels during the Japan Fishing Festival, at Yokohama in January 2015.
I’ve heard so much about this reel in the latter half of the preceding decade from friends who dislike eating fried bird’s nest. They speak of this reel with a sort of reverence and awe that’s reserved for something extraordinarily great, and the first thing they mention would be the Hyper Digi Gears from the Saltiga Z reel, that’s also driving this reel. Those gears are made of tougher C6191 alloys which will make this reel last much longer than a regular Certate, which — I understand from hearsay, is already legendary. So, as a consequence, my interest is piqued enough despite my trepidation, to want to crack this reel open to see what is the big deal about.
